Recipe: Ackee & Okra
(Serves 4 persons)
INGREDIENTS:
- 2 doz. ackee
- 8 okra
- 1 onion
- 1 tomato
- 1 string scallion
- 1 string thyme
- 1 Scotch bonnet pepper
- 1 pec off garlic
- 1/2 teaspoon oregano
- salt and black pepper
- 4 tablespoon of cooking oil.
HOW TO PREPARE:
When you buy fresh ackee, do as follow: take the ackee out of the skin,
take the black seed out and after, take a small knife and take out the
little purple/ pink string (do this good because this part of the
ackee is poison).
When cleaned put the ackee in a pot with water and salt and boil it for
aproxemently 10 minutes until the ackee is medium soft (take a fork and
feel if they soft, not to much). After boiling, drain the ackee.
Take a next pot and put the oil in it and add the cut up onion, tomato,
okra, garlic, scallion and Scotch bonnet pepper. Add a little water to it, add the rest of the ingredients and cook it till okra is tender.
After this is done you add the ackee to the vegetables and stir it up (be careful that you don't mash up the ackee). Let it simmer for 2 more minutes.
Serve it hot with Fried Dumplin.
This delicious meal you can serve as breakfast, or for vegetarian or
small dinner plate.
Of course, you serve this with a well COLD RED STRIPE.
